It is safe to say that when it comes to vegetables, it is pretty hard to go wrong. Low in calories overall, and packed full of dietary fibre and essential nutrients, with fewer than 10 per cent of Aussies getting their recommended daily intake of veggies, most of us could do with eating a lot more.
